More About Us

Ziti’s is an independent restaurant in West Fargo, ND

We specialize in homemade Italian American comfort food and genuine hospitality. Ziti’s was opened by partners in life and business Gabby Metzger and Pat Lipsiea (with some help from daughters Charlie and Lulu) with the goal of creating a place the neighborhood, community, and visitors could come to feel at home while having a home cooked meal in a warm setting.

Gabby and Pat together have decades of Service Industry experience consulting, developing, opening and operating establishments for some of the region/nations most successful and recognizable companies.

In 2025 they decided to take that experience and open Ziti’s in The Lights development of West Fargo, just a few short blocks from their home. It is our honor to serve the neighborhood and larger community and we hope to see you soon!

FAQs

Do you have Gluten Free options?
Yes- All of our sandwiches are available gluten free and most of our entrees are naturally gluten free. We do not currently offer a gluten free pasta as we search for one we are proud to serve at a price point that is reasonable for our guests! In the meantime, we have many great options for our celiac/GF friends!
Do you have any Vegetarian options?
Yes- we have dishes that are vegetarian by design and most of our menu can be adjusted to accommodate vegetarian diets upon request!
Do you have any Vegan options?
Oh boy… Umm… That’s a little tricky as we use an awful lot of eggs and so on but if you let your server know, Pat will do his best to whip something up for you!
I heard that there is nowhere to park at the Lights, is that true??!
No! The Lights does have posted reserved parking on a limited amount of spots but the vast majority of the parking on our block is first come first serve! If you have trouble finding a spot there is a FREE, safe, and covered 4 story parking ramp less than a block north of our front door. What’s better? You can take the skyway into the building and follow right to our interior door without ever stepping foot out in the cold, rain, snow, or wind! If you are having a glass of wine or two, the garage is free 24/7 so feel free to relax and grab a ride home.

I heard you need reservations, is that true??!

No! We are a restaurant that is small in size but big on hospitality. In an effort to accommodate as many guests as possible we limit our reservations to half of the dining room at any given time. At lunch you can almost always walk right in for Presto Pranza! but a reservation never hurts if you know you’re coming out. For dinner service, we do recommend you can call our host team at 701-532-0477 and they will help you out! If you don’t feel like talking to someone on the phone you can submit a request for a reservation at this LINK. IMPORTANT: this is a request, until you are contacted with confirmation you do NOT have a reservation. Lastly, there are a few other (unaffiliated) Ziti’s around the country. If you made a reservation online- it is for one of the others and not us, we do not use a third party online reservation application.

I tried to make a reservation for 18 people for this Saturday and you said “no”, don’t you want my business?!!

Yes! We do want your business and we are grateful you chose us to host. However much we want to say ‘yes!’ to every group that would like to dine with us the fact is we are not the best option for all groups. Please understand that due to the size of our restaurant we are very limited to the size of party we can accommodate. At Ziti’s we have 20 tables of varying sizes and styles, a party of 18 requires up to 5 of those tables. In order to guarantee your reservation time, we have to stop seating those tables 2 hours ahead of your party. For a 6:00 reservation- that means 5 tables sit empty for the first two hours of service which is frustrating for patrons wanting to dine and an “L” for us as a business. If you fill out the reservation request form at this LINK we will get as creative as we can to accommodate you and find a win/win scenario!

I went to Italy and this is not how lasagna is prepared there, you really call yourself an “authentic Italian” restaurant?!
No! We don’t! At Ziti’s we cook and host in the style of the 2nd/3rd generation of Italians in America along with some of our own more modern favorites that reflect who we are as a team. We are NOT an authentic Italian restaurant. We are NOT, admittedly, even Italian! Pat is of French/Irish decent and Gabby is Russian/German/French. Not a drop of the Boot in either of them. We ARE, however, a kitchen that prides itself in showing respect and love for this beautiful cuisine by making scratch dishes with great ingredients and doing it the best way we know how- with patience and care.
We really want to come in for dinner but my cousin is gluten sensitive- do you even have anything he can eat?

Are all those pictures on the wall your family?!
No! But a lot of them are! We had a lot of help from our families in procuring historic photos of our lineage from the late 1800’s to today. Of the 540 photo’s that hang roughly 300 are of our families. The remaining 240 are photo’s of our region and communities throughout the past 150 years, some of our favorite musicians, screen shots from movies/TV that we love, and more easter eggs hidden throughout.
